MY EARLY YEARS

FOOD

My journey with food started off quite unremarkably. I ate my breakfast, lunch and dinner, as directed, like any old Joe and probably begged for a treat or two every now and again.

However, at the age of 7 I experienced a horrendous case of tonsillitis and could barely eat for weeks, losing about 20% of my body weight! When I recovered and I could finally eat again my first meal was of course Wattie's spaghetti on toast with cheese and oh my GOODNESS I could not believe the delight. My taste buds? On fire. My brain? Lit up in pure joy. My stomach? Happy as ever. And that was the beginning of it all... my love affair with food had begun. From then on, food was to be savoured and enjoyed - every mouthful like a little morsel of wonder, and every new food an experience to remember. And I've never looked back! Food became, and still is, one of my favourite sensory experiences, and everything I make, ESPECIALLY the baking I sell, is made with extraordinary intention and thought to make it the absolute best experience it can be!!!

THE KITCHEN

My journey in the kitchen started as young as I can remember!

I was always drawn to the kitchen as a kid - perhaps because this is where I saw my mum spend so many hours, but also perhaps because of the creative allure it seemed to have around it...

My mum wasn't a recipe follower, so to me, the kitchen was more like a creative lab where infinite creations could be produced by combining all sorts of different ingredients!

Luckily for me, my mum gave me quite a bit of free rein in the kitchen and let me make pretty much anything I liked. So, naturally, I experimented with all sorts of ingredients and, throughout my childhood, spent hours making up my own recipes for cakes, muffins and whatever else I could dream up with the ingredients we had on hand!

The results were usually very dense and slightly weird, but nonetheless, I loved the adventure of experimenting.

THE PANDEMIC BAKER: MISS BETTY IS BORN

Until I was about 22, I did enjoy baking, but I didn't necessarily love the hassle that came with it - mostly the mountain of dishes that follow in the wake of a terribly messy baker such as myself.

Because of this, I would usually only bake for very, very special occasions!

Then came 2020.

Like many people during COVID, my usual routine was switched up a fair bit. I was no longer able to attend my nannying job and, as a university student, I needed a little extra cash.

One day, I received a completely bizarre message from a friend of my mum's:

“Rachel - are you taking cake orders during lockdown?”

I was totally confused. I wasn't much of a cake maker and had never sold a baked good in my life!

But nonetheless, I confidently replied:

“I absolutely am! What flavour would you like?”

…And then I thought, oh god, I guess I better learn how to make a proper cake.

I spent the next week teaching myself how to make a layered cake and eventually mastered a delicious cookies & cream chocolate cake.

And on 14 September 2021, my first cake went out the door and into a customer's hands!

I suddenly had a collection of cake photos and decided I should make an Instagram to show some of my creations. I sent a message to my family group chat asking for name suggestions, and among the ideas were Miss Betty and Betty Bakes.

So, naturally, I combined the two and called it Miss Betty Bakes! (Although, I have now dropped the 'Bakes' and have become the very refined and very chic Miss Betty)

I started posting my cakes and, before I knew it, someone messaged asking to see my menu.

Oh gosh, I thought. I guess I better make a menu!

For the next six months, I sold cakes and macarons before taking a little break to complete my Postgraduate Certificate in IT.

Then, in November 2022, I restarted Miss Betty Bakes with a whole new focus...

COOKIES.

And I have never looked back.

BETTY'S NEW ERA BEGINS: COOKIES

Goodbye, cakes and macarons. Hello to the delicious world of cookie making!

I fell completely in love with making New York-style cookies - thick, chunky, buttery, indulgent cookies packed with all sorts of delicious flavours and fillings.

I loved making cookies so much that I decided to delay applying for full-time jobs and instead pursued a part-time certificate in data analytics while continuing to run Miss Betty!

After finishing my studies in August 2023, I took Miss Betty full-time for eight months.

At my peak, I sold 380 cookies, brownies and slices in a single day!

Then, in April 2024, I took on a full-time position elsewhere and scaled the business back hugely to part-time for a while.

But now, in 2026, I'm back up and running at full speed - and I am SO glad to be back!!!

So, why cookies?!

I absolutely LOVE the creativity that baking cookies allows me.

Playing with flavours, textures, combinations, trends and completely new ideas - it all really excites me. There are so many possibilities with a cookie, and I love figuring out how to turn an idea in my head into something that actually comes out of the oven.

I looove the challenge of making something the absolute best it can be!

And at the end of it all?

I GET TO EAT THE COOKIES TOO!

I have dabbled in slices and brownies over the years and I'm hoping to bring some of those delicious creations back in the future.

But for now, cookies are my sole focus.

I didn't set out to build a cookie business. I simply loved baking them so much that they worked their way into my life - and boy oh boy, I wouldn't change a thing!
